Carrot Raitha

Description: A cool dish combining yogurt and carrots.
Preparation Time: 15 mins

INGREDIENTS: MAIN:

Fresh carrots(grated) – big –2
Sweet curd – 2 cups
Green chillies(finely cut) – 2
Coriander leaves(finely cut) – 2 tablespoons
Grated coconut – 2 tablespoons
Salt – to taste
Coconut oil – 1 teaspoon

FOR SEASONING:

Coconut oil – 2 teaspoons
Mustardseeds – ½ teaspoon
Blackgram dal – ½ teaspoon

PREPARATION METHOD:

1.Heat the oil and add mustard seeds,when it starts to crackle, add the blackgram dal.
2.When the blackgram dal is golden brown, add cut chillies and the coriander leaves.
3.Add the above mixture and salt to the grated carrots.
4.Just before serving, add cold curds and the grated coconut and mix thoroughly.
