Description: A sweet dish made with cashew and coconut.
Preparation Time: 25 mins
Coconut(fresh and grated) – 2 cups
Cashewnuts – ½ cup
Sugar – 2 cups
Saffron(soaked in little milk) – few strands
Lime juice – ½ teaspoon
Cardamom powder – 1 teaspoon
1.Soak the cashewnuts for half an hour, drain and grind with coconut to a coarse paste.
2.In a heavy bottomed vessel combine the sugar and half a cup of water and allow the syrup to come to a one string consistency.
3.Add the ground paste and lime juice and keep on stirring.
4.Stir the mixture nicely making sure there are no lumps and when the mixture starts to leave the sides of the pan and becomes slightly dry add the saffron and cardamom powder.
5.Stir for a few more minutes and transfer onto a greased plate. When slightly cool cut into pieces.
6.The burfi can be stored in an air tight container for upto a week.
