Cucumber Raitha

Description: A cool dish combining yogurt and cucumbers.
Preparation Time: 15 mins

INGREDIENTS: MAIN:

Tender Cucumber(grated) – ½ cup
Sweet curd – 1½ cups
Grated coconut – 2 tablespoons
Coriander leaves(finely cut) – 2 tablespoons
Salt – to taste

FOR SEASONING:

Coconut oil – 2 teaspoons
Mustardseeds – ½ teaspoon
Blackgram dal – ½ teaspoon
Red Chilli – 1 small
Green Chilli – 1 slit
Curry Leaves – 4-5

PREPARATION METHOD:

1.Beat the curds lightly,add grated cucumber,coconut and salt.
2.Heat the oil and add mustard seeds,when it starts to crackle, add the blackgram dal and red chilli.
3.When the blackgram dal is golden brown, add the green chilli and the curry leaves.
4.Add the above mixture to the grated cucumber and curd mixture.
5.Chill and just before serving, add coriander leaves for garnishing.
