Curry Leaf Powder

Description: This is a nice powder made with Curry Leaves which can be eaten with rice.
Preparation Time: 20 mins

MAIN INGREDIENTS:

Fresh Curry Leaves – 1 cup
Black gram dhal – 1/2 cup
Red Chillis – 8
Tamarind powder – 2 tsp
Asafoetida(broken into pieces)– 1 big piece
Gingelly oil – 2 tablespoons
Salt to taste.

METHOD:

1.The curry leaves should be washed and dried to remove all moisture.
2.Heat 1 tablespoon of oil in a frying pan and fry the asafoetida to a rich brown colour.
3.Add blackgram dhal and redchillis to the pan. Fry till the dhal is a rich brown colour.
4.Spread on a sheet of paper and allow to cool.
5.In the same pan add another tablespoon of oil and when it is hot reduce the heat the add the curry leaves. Saute for a few seconds and remove from the pan.
6.Spread on a sheet of paper and allow to cool.
7.Combine the curry leaves,roasted dhal and redchillis,salt and tamarind powder and powder coarsely.
This can be stored in an air tight container for about 6 months and for as long as a year in the freezer.
