Description: This is an especially easy powder to prepare and adds flavour and aroma to a number of recipes.
Preparation Time: 20 mins
Asafoetida(broken into pieces)– 1 big piece
Methi seeds – ¼ cup (250ml cup)
Gingelly oil – 1 tablespoons
1.Heat oil in a pan, add asafoetida first and when it is almost black,add the Methi seeds and allow it to splutter and turn rich brown.
2.Drain the oil and transfer the contents onto a sheet of paper and allow it to cool.
3.Powder this mixture finely.
This can be stored in an air tight container for about 6 months and upto a year in the freezer.
When making Sambhar and Gojju adding this gives it a nice aroma.
It can also be used in making instant pickles like mango thokku,tomato chutney and a variety of other dishes.
