Mango Rice

Description: A nice flavored rice with mango and coconut.
Preparation Time: 25 mins

MAIN INGREDIENTS:

Rice- 1 cup
Mango(sour variety-grated)- 4 tablespoons
Fresh coconut(grated) – 4 tablespoons
Mustard seeds – ¼ teaspoon
Green chillies – 6
Coriander leaves(finely cut) – 4 tablespoons
Salt – to taste
Turmeric powder – 1 pinch
Ghee – 1 tablespoon

FOR SEASONING:

Coconut oil – 2 tablespoons
Asafoetida powder – 1 pinch
Mustard seeds- ½ teaspoon Blackgram dal – 1 teaspoon
Cashewnuts – 10
Curry leaves – 1 sprig

METHOD:

1.Pressure cook rice(use one and a half cup of water so that the cooked rice is not too soft).
2.When cool, remove, fluff it with a fork, add the ghee and mix thoroughly.
3.Grind the grated mango,coconut,mustard seeds,green chilies, and coriander leaves into smooth paste,adding very little water.
4.Heat the coconut oil in a pan and add asafoetida powder,mustard seeds, blackgram dal and cashewnuts.
5.When the dal turns golden brown,add curry leaves, the ground paste and turmeric powder.
6.Saute for some time on slow flame.
7.Add the cooked rice and mix it gently and leave it in the pan for some time, stirring now and then taking care not to mash it too much.
8.Remove and serve hot as it is or with fried papad.
