Okra/Lady’s Finger Raitha

Description: A tangy raitha combining yogurt and Lady’s Finger(Bhindi/Okra).
Preparation Time: 15 mins

INGREDIENTS: MAIN:
Small tender Lady’s Finger – 10-15
Sweet curd – 1 ½ cups
Red chilli – 1
Mustard seeds – 1 teaspoon
Grated coconut – 2 tablespoons
Salt – to taste

FOR SEASONING:

Coconut oil – 2 teaspoons
Mustard seeds – ½ teaspoon

PREPARATION METHOD:

1.Wash and wipe the lady’s finger and cut them into small pieces.
2.Heat the oil and fry the lady’s finger to a rich brown color, drain the excess oil and keep aside.
3.Grind the coconut,red chilli and mustard seeds to a smooth paste.
4.Beat the curd lightly and add the fried lady’s finger,ground paste and salt and mix thoroughly.
5.Heat the coconut oil in a pan and add mustard seeds,when it starts to crackle, add the curry leaves. Add this to the curd mixture, mix well and serve.
