Orange Rasam

Description: This is a very flavourful rasam made with orange pulp.
Preparation Time: 15 mins

INGREDIENTS: MAIN:

Oranges – 3 medium size
Toordal – ½ cup
Tomato –1 small (chopped)
Green Chillies – 2 slit
Tamarind pulp – 2 tablespoons
Sambar Powder – 1 teaspoon
Coriander and Cumin powder – 1 teaspoon
Curry leaves – 1 sprig
Coriander leaves – a few
Salt – to taste

FOR SEASONING:

Ghee – 2 tablespoons
Mustard seeds – ½ teaspoon
Curry leaves – 1 sprig
Coriander leaves – for garnishing

PREPARATION METHOD:

1.Extract the juice from the oranges and keep aside.
2.Pressure cook the toor dhal with the tomato,cool and blend it.
3.Transfer the toordhal and tomato mixture to a vessel and add 3 cups of water,slit green chilli,turmeric powder,salt and asafoetida powder and allow it to boil.
4.When the mixture boils add the tamarind pulp,sambhar powder and the coriander and cumin powder. Allow it simmer for 5-8 minutes.
5.Remove the rasam from the fire and add the orange juice and a tablespoon of ghee.
6.Heat the other tablespoon of ghee and add the mustard seeds, when it crackles add the curry leaves and the coriander leaves and pour

7.Serve hot.

VARIATION:
Instead of adding the fresh orange juice in step5, fresh pineapple juice can be added to make Pineapple rasam.
