Potato Onion Raitha

Description: A cool dish combining yogurt,pearl onions and boiled potato.
Preparation Time: 15 mins

INGREDIENTS: MAIN:

Potato – 1 medium(boiled and cut into cubes)
Sweet curd – 2 cups
Pearl Onion(small onions) – 5(finely cut)
Coriander leaves(finely cut) – 2 tablespoons
Grated coconut – 1 tablespoons
Salt – to taste

FOR SEASONING:

Coconut oil – 2 teaspoons
Mustardseeds – ½ teaspoon
Blackgram dal – ½ teaspoon
Green Chilli – 2(finely cut)
Ginger – 1 small piece(finely cut)
Broken cashewnuts – 1 tablespoon
Curry Leaves – 4-5

PREPARATION METHOD:

1.Beat the curds lightly,add the onion, boiled potato,grated coconut and salt.
2.Heat the oil and add mustard seeds,when it starts to crackle, add the blackgram dal and cashewnuts.
3.When the blackgram dal is golden brown, add the green chilli,ginger and the curry leaves.
4.Add the above mixture to the curd mixture.
5.Chill and just before serving, add coriander leaves for garnishing.
