Roasted Brinjal Raitha

Description: A raitha combining yogurt and the smoky flavor of roasted brinjal.

INGREDIENTS: MAIN:

Brinjal – 1 (roasting type)
Sweet curd – 1½ cups
Green Chilli – 3 finely cut
Coriander leaves(finely cut) – 2 tablespoons
Curry Leaves – 4-5
Salt – to taste
Cooking oil – 2 tablespoon

FOR SEASONING:

Coconut oil – 2 teaspoons
Mustardseeds – ½ teaspoon
Blackgram dal – ½ teaspoon
Red Chilli – 1 small
Methi seeds – 1 pinch

PREPARATION METHOD:

1.Apply little oil over the brinjal and roast over the flame.Cool and scoop out the pulp and keep aside.
2.Beat the curds lightly,add the brinjal pulp and salt and mix well.
3.Heat the oil and add the methi seeds first then the mustard seeds,when it starts to crackle, add the blackgram dal and red chilli.
4.When the blackgram dal is golden brown, add the finely cut green chilli,coriander leaves and the curry leaves.
5.Add the above mixture to the curd mixture mix and serve.
