Semolina Papads in Payasam

INGREDIENTS: MAIN:

Semolina(Rava) – 1 cup
Milk(boiled) – 4 cups
Sugar – 2 cups
Cardamom powder – ½ teaspoon
Saffron(soaked in little milk) – few strands
Orange food color – ½ teaspoon(soaked in a tablespoon of cold milk)
Almond essence – a few drops
Edible camphor – a pinch
Refined flour(Maida) – 3 tablespoons
Oil – for frying

PREPARATION METHOD:

1.Add water little at a time to the semolina and make a stiff dough and keep it covered with a wet cloth for about an hour.
2.Take a lump of dough shape it into a ball and using some maida roll into a small thin circle and prick it with a fork, this will prevent it from rising while frying.
3.Repeat the above procedure with all the dough. Deep fry all the circles in hot oil to a golden brown color.
4.Cool the papads and crush it into tiny bits and keep in a air tight container.
5.The papads can be made a day or two ahead and stored.
6.Boil the milk and reduce it to 2 cups and add the sugar and the orange food color.
7.When the sugar is dissolved remove from the fire and allow it to cool for sometime.
8.Add the crushed papads to the milk and stir gently. Keep aside to cool completely.
9.When cool add the cardamom powder,saffron,edible camphor,almond essence and mix gently.
10.Chill and serve.
