Sweet Rice Pongal

Description: A traditional sweet dish made with greengram dhal and rice eaten during the festival Pongal/Sankaranthi.

INGREDIENTS: MAIN:
Rice – 1 cup
GreenGram Dhal(Moong Dhal) – ¼ cup
Milk(boiled) – 2 cup
Jaggery(grated)- 2 cup
Sugar – ½ cup
Cardamom powder – ½ teaspoon
Cashewnuts – 20
Raisans – 15
Ghee – ½ cup
Nutmeg – 1 small piece(crushed)
Cloves – 6
Cinamon – 1 small piece

PREPARATION METHOD:

1.Dry roast the green gram dhal to a light brown colour in a pan.
2.Fry the cashewnut, raisans,nutmeg and cloves in ghee and keep aside.
3.Pressure cook the rice and dhal in the normal way, a little overcooking is better.
4.In a heavy bottomed vessel combine the jaggery with one cup of water stirring nicely till all the jaggery has dissolved.
5.When the mixture starts to boil add the cooked rice and dhal and mix thoroughly.
6.Add the milk and cook on slow a flame stirring continuously.
7.Once the mixture becomes a bit thick remove from the fire.
8.Add the remaining ghee,fried cashewnuts and raisins,nutmeg,cloves and cardamom powder and mix thoroughly.
9.Cool and serve..
