Mint Rice

Description: A nice flavored rice with fresh mint leaves.
Preparation Time: 25 mins

MAIN INGREDIENTS:

Raw rice – 1 cup
Fresh mint leaves – 1 cup(finely cut)
Green chillis – 5
Onion – 1 big(sliced thin lengthwise)
Fresh green peas – 2 tablespoons(boiled)
Grated coconut – 5 tablespoons
Cashewnuts – 10
Cumin seeds – 1 teaspoon
Garammasala powder – 1 teaspoon
Lime juice – 1 teaspoon
Oil and ghee mixture – 4 tablespoon
Turmeric powder – ¼ teaspoon
Salt – to taste

METHOD:

1.Cook the rice in just 2 cups of water so that rice grains are separate.
2.Grind the mint leaves with grated coconut,green chillis and lime juice to a smooth paste.
3.Heat oil and ghee mixture and season with cumin seeds. When they puff up add the cashewnuts and fry till light brown.
4.Add the sliced onion and a pinch of sugar and saute on a slow flame till the onion turns light golden brown.
5.Add the ground paste and saute on a medium flame till the raw smell disappears and a nice aroma comes.
6.Add the salt,turmeric powder,boiled peas,lime juice and the cooked rice and mix thoroughly.
7.Transfer the rice to the serving dish and garnish with tomato slices and mint leaves.
