Description: A tangy raitha combining yougurt and Lady’s Finger(Bhindi/Okra).
Preparation Time: 15 mins
Lady’s Finger – ½ kilo
Onion – 1 medium sized(grated)
Tomato Puree – 5 tablespoons
Grated Coconut – 2 tablespoons
Red Chilli powder – 2 teaspoon
Cumin powder – 2 teaspoon
Turmeric powder – ½ teaspoon
Cooking Oil – 5 tablespoons
Salt to taste
Coconut oil – 2 teaspoons
Mustardseeds – ½ teaspoon
1.Wash, wipe and dry the lady’s fingers, trim the top and tip and cut 1 inch long pieces.
2.Heat 4 tablespoons of oil in a pan and add the lady’s finger pieces, 1 teaspoon each of cumin powder and red chilli powder and half a teaspoon of turmeric powder. Saute continuously on a high heat till the pieces are a rich brown colour. Just before removing add a little salt and mix gently.
3.Strain the excess oil and remove on to a plate.
4.In the same pan add the remaining 1 tablespoon of oil.
5.Add the grated onion and saute on a medium flame till it turns a golden brown. Then add the tomato pureee,1 teaspoon each of cumin powder and red chilli powder and half a teaspoon of turmeric powder and a pinch of salt.
6.Fry well till the oil leaves the side of the pan. Add the fried lady’s finger pieces mix gently and leave it on the flame for a few minutes.
7.Add the grated coconut mix and serve hot.
